Ingredients
  

  • 500 gm Eggplant / கத்தரிக்காய் - sliced
  • 100 ml Oil / எண்ணெய்
  • 10 nos Shallots - peeled and sliced
  • 10 nos Green Chili, Fresh / பச்சை மிளகாய் - slit
  • 2 tbsp Mustard seed / கடுகு
  • 8 tsp Vinegar
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 tbsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 1 tbsp Sugar, White / சர்க்கரை, வெள்ளை
  • 1 tsp Turmeric powder / மஞ்சள் தூள்

Instructions
 

  • Soak mustard seeds in vinegar for 30min
  • Mix sliced eggplant with turmeric powder, salt well
  • Deep fry in oil for 5min, stir occasionally
  • Remove the eggplants in a bowl, allow it to cool
  • Grind soaked mustard seed into fine paste
  • Fry onion and green chili a bit so that raw flavor goes away (optional)
  • Mix onion and green chili well with fried eggplant well along with mustard paste
  • Serve along with hot rice
