Wambatu Moju
Ingredients
- 500 gm Eggplant / கத்தரிக்காய் - sliced
- 100 ml Oil / எண்ணெய்
- 10 nos Shallots - peeled and sliced
- 10 nos Green Chili, Fresh / பச்சை மிளகாய் - slit
- 2 tbsp Mustard seed / கடுகு
- 8 tsp Vinegar
- 1 tsp Salt / உப்பு - adjust to your taste
- 1 tbsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- 1 tbsp Sugar, White / சர்க்கரை, வெள்ளை
- 1 tsp Turmeric powder / மஞ்சள் தூள்
Instructions
- Soak mustard seeds in vinegar for 30min
- Mix sliced eggplant with turmeric powder, salt well
- Deep fry in oil for 5min, stir occasionally
- Remove the eggplants in a bowl, allow it to cool
- Grind soaked mustard seed into fine paste
- Fry onion and green chili a bit so that raw flavor goes away (optional)
- Mix onion and green chili well with fried eggplant well along with mustard paste
- Serve along with hot rice
