Mix yeast and 1tbsp sugar into warm water
Close with a lid and set aside until foamy
In a mixer, grind cooked rice and coconut using the yeast water
Add raw soaked rice and salt to the blender and continue to grind using additional 1cup of water little by little
Batter should be ground absolutely smooth
Transfer the batter into a large container with a lid and keep it in a warm place and allow to ferment for about 8 hours
Add additional 4tbsp sugar and ½cup water and mix well
Heat appam chatty well in high flame
Pour a ladle full of batter into the center of the chatty
Hold the chatty and swirl it around so that the batter swirls all the way to the edges of the chatty
Cover the chatty and allow the aappam to cook for approx 2~2½min
The edges turns brown
Gently lift the aappam from one side and move the skillet so that the appam moves freely
Remove the aappam from the pan
Serve hot with vegetable stew
