Dry roast coriander seeds, mustard, fenugreek, dry red chillies, asafoetida, fennel seeds and allow it to cool a bit
Grind the above along with all ingredients listed for grinding into a fine paste
Heat oil in a vessel
Temper mustard, urad dhal, fresh curry leaves
Add shallots and fry well
Add other vegetables and allow to cook a bit in Oil
Add tamarind water, salt and allow vegetables to cook in it until tender
Add ground masala and mix well, if required add little water and bring to a boil
Add cooked thoor dhal, mix well and bring to boil
Remove from heat
Garnish with coriander
Serve hot with rice or idli or dosa
