In a bowl add smashed potato, salt, ½tsp turmeric powder, 1tsp red chili powder, amchur, pav bhaji masala, onion, fresh coriander leaves, carrot, green peas, mix well and keep aside
Grind mint and green chili into a fine paste, add salt and keep it aside
In another bowl, add besan, rice flour, remaining turmeric powder, red chili powder, salt ajwain and mix well with water into a bajji batter consistency
Take 2 slices of bread spread mint chutney on top of both slices evenly
Spread potato masala mix over one bread slice evenly
Sandwich them and cut them diagonally
Dip the sandwich in besan batter and deep fry just like bajji until golden brown
Serve hot with ketchup or any spicy chutney
