Heat 1tbsp of olive oil in a large skillet ove medium heat
Add onion and salt and sauté until translucent
Add garlic and sauté until fragrant
Add eggplant and sauté well, stir every now and then, until browned and soft for about 10min
Transfer into a blender and blend into a puree
Add cheese, coriander , black pepper and mix well
Add rava little by little and mix until it reaches a firm consistency and will hold up as patties
Refrigerate it for about 20min, thus the rava will such up some of the moisture
Divide into 8 balls and make into patties
Heat remaining olive oil in the same skillet over medium heat
When sizzling, add patties in batches and cook for 4~5min on each side until golden brown
Serve hot with ketchup/sauce on the side
