Sugar, White / சர்க்கரை, வெள்ளை

Sesame seed, Black / எள்ளு, கருப்பு

(adjust to your taste, be careful: Soy Sauce will be salty)
Instructions
Mix soy sauce, cooking sake, mirin, sugar well in a small bowl
Marinate mushroom with above sauce for 15~20min
Arrange the mushroom over a baking paper in an oven-safe tray, reserve the excess sauce
Allow it to dry for about 10min
Grease with oil
Pre-heat oven to 180°C
Grill it for 10~15min
Reverse the mushroom, and grill it for another 10min
Heat oil in a skillet
Stir fry 1tbsp spring onion
Add grilled mushroom and stir fry a little
Add the remaining sauce and cook for 2min
Garnish with remaining spring onion, sesame
Notes
Serve with steamed Japanese rice with eryngii teriyaki topping
