Heat little oil in a pan (wok is apt)
Add onion, sauté well until edges are fried
Add carrot, peas, sauté well until soft
Add red capsicum, yellow capsicum, cabbage, sprinkle a little salt, mix
Fry for a couple of minutes
Keep the fried vegetables aside
Heat rest of oil
Add egg, allow the white yolk to fry a little without breaking the yellow yolk
Add rice, fry it along with the yellow yolk
Add soy sauce, cooking wine, mix well
Add rest of salt, black pepper, fried vegetables, spring onion, mix well
Fry well for 2~3min in high flame
