Eggplant / கத்தரிக்காய்

Tamarind extract / புளிக் கரைசல்

Turmeric powder / மஞ்சள் தூள்

Red Chili powder / மிளகாய்த் தூள்

Instructions
Heat 2tbsp of oil in a pan
Sauté eggplant well until it is well cooked, allow it to cool
Grind the eggplant into fine paste
Add eggplant paste and tamarind extract to the pan
Add little more oil, turmeric powder, red chilli powder, salt
Stir the mix continuously, else the bubbles formed will burst and splash the paste all over the place
Add oil little by little and keep stirring
Once the paste is thick add remaining oil and allow it to cook for 3~5min
Allow it to cool

* Store in a air tight dry container
* Store in a cool dry place
* Never use damp spoon or spatula
