Wash and pressure cook spinach for about 10min
Mash the spinach well, keep aside
Dry roast urad dhal, cumin seed and red chili until golden brown, allow it to cool
Grind into fine powder
Add the powder, salt and mix with mashed spinach
Heat oil in a pan
Add mustard allow it to splutter
Add urad dhal, red chili and fry until golden brown
Add turmeric powder, asafoetida and mix well
Mix the above well with mashed spinach
Serve hot along with rice
