Grind red chili with required water to make a smooth paste, keep aside
Grind ¾th of small onions, garlic, cumin with required water to smooth paste, keep aside
Mix tamarind extract, both above pastes, turmeric powder and salt
In a big vessel boil 12cups of water
Add thoor dhal, turmeric powder, allow it to cook till the dhal blossoms and becomes mashable by hand
Add all the vegetables, drumstick leaves, spinach and cook for about 10 minutes.
Stir when necessary
Add the rice, boil for 10~15 minutes until rice is fully cooked
Add salt and mix well
Heat 1tbsp oil in a kadai and sauté onions, green chili and add to rice
Add the tamarind extract mixture and allow it to boil for 5 more minutes in medium flame
Keep stirring every now and then to avoid burnt bottom
Add grated coconut and mix well
Heat sesame oil and temper mustard, urad dhal, curry leaves and add to the rice
Allow it to cool for about 1hour
Serve warm with fried vadam and/or appalam
