Wash the rice well and dry a little with a cloth
Heat ghee in a thick bottomed vessel, preferably a cooker
Fry the rice gently
When rice turn color to bright white pour milk on it and boil well
Rice should cook well in the milk
When the milk comes to a boil simmer the flame and allow the rice to overcook
By now the milk should also be little thickened
Add sugar and boil the milk further
Once the sugar is has dissolved well, switch off the flame
Add a few strands of saffron on top of the payasam
Serve hot
