Heat 1tbsp oil in a pan
Add 2 onions and cook till transparent
Add 2 tomatoes cook until mushy
Add green chili, spinach and cook for 5mins in low flame
Allow it cool, then blend it to a fine paste, keep aside
Heat rest of 1tbsp of oil
Add rest of onion, cook till slightly brown
Add rest of tomato, cook it for 4~5mins in medium flame
Add the paste, masoor dhal, kasuri methi, salt cook for 2 mins
Add garam masala powder and cook for 2~3mins
Temper fenugreek in rest of oil
Add dry red chili and fry
Pour over the curry
Serve hot with rice or roti
