Instructions
Heat little olive oil in a pan, preferably a non-stick pan
Sauté onion, garlic, ginger, green chili, spring onion, bell pepper in order, finally spinach for about 2min
Add salt, pepper, mix well
Add above vegetable mix, carrot, mint to the beaten egg, mix well
Add rest of oil into the pan, evenly spread it well
Pour the above mix
Cook for 2 min in high flame
Lower the flame and cook until the top portion becomes little solid
Take a flat plate which is slightly bigger than the pan
Cover the pan with a plate
Now carefully reverse the pan such that the omelet is well placed over the plate
Slide the omelet back to the pan carefully
Cook for about 3~5min for the other side to cook
Switch off the flame
Notes
Serve hot with ketchup or hot chili sauce
