Stuffed Bell Pepper with Rice

Ingredients
  

  • 4 nos Bell Pepper / குடை மிளகாய்

for Stuffing

  • 1 cup Rice / அரிசி - cooked
  • 100 gm Paneer - cottage cheese, grated
  • 2 tbsp White Sauce or fresh cream
  • 1 nos Bell Pepper / குடை மிளகாய்
  • 3 nos Green Chili, Fresh / பச்சை மிளகாய் - chopped
  • 1 nos Onion / வெங்காயம் - chopped
  • 5 pod Garlic / பூண்டு - chopped
  • 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - chopped
  • 1 tsp Salt / உப்பு - adjust to your taste
  • 1 tsp Oil / எண்ணெய்

for Topping

  • 2 tbsp Cooking Cheese - grated

Instructions
 

  • Heat oil in a pan
  • Add onion, garlic green chili and sauté them
  • Add rice, paneer, cream and mix well
  • Cut the capsicum on the top to make it a cup like structure, keep the top cap and de-seed them
  • Put in salted boiling water for 3~4 minutes and remove
  • Fill with the stuffing
  • Cover with the cooking cheese and bake in a hot oven at 175°C (350°F) for 10~15min minutes
  • Serve hot
