Heat butter in a pan
Add cumin and allow it to splutter
Add all the chopped vegetables and sauté them well
Add salt, red chili powder, garam masala powder and mix and cook well for 2min
Add paneer and cook for 2min
Add ¾cooked rice mix well
Switch off the flame, keep aside
Cut top of pumpkin a little
Carve out the flesh and seeds
Marinate with salt on the inner side of the pumpkin and allow it rest for 10min
Stuff the pumpkin with the above rice mix
Cover the pumpkin
Wrap with aluminium foil
Pre-heat oven to 220°C
Bake the pumpkin for 30min
Unwrap the aluminium foil and bake for another 20min
Serve hot
