Thai Coconut and Vegetable Rice

Ingredients
  

  • 2 cup Basmati Rice / பாசுமதி அரிசி - cooked
  • 1 cup Coconut Milk / தேங்காய்ப் பால்
  • ¼ cup French Beans, Fresh - long sliced boiled
  • ¼ cup Green Peas, Fresh / பச்சைப் பட்டாணி - boiled
  • ¼ cup Baby Corn - sliced and boiled
  • ½ tsp Corn flour
  • 2 tsp Garlic / பூண்டு - ground to paste
  • 2 tsp Red Chili, Fresh - ground to paste
  • 2 tbsp Coconut Oil / தேங்காய் எண்ணெய்
  • ½ tsp Lemon Zest
  • 1 tbsp Basil leaves, Fresh - chopped
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Mix corn flour in the coconut milk and keep aside
  • Heat oil in a pan
  • Add garlic, chili paste and sauté well in a medium flame
  • Add coconut milk, corn flour mix, cooked vegetables, lemon zest, salt, mix well and cook on a medium flame for 5min
  • Add rice, mix well and cook for another 2 min, stir occasionally
  • Serve hot with Thai Green Curry
