Heat oil in a pan
Temper mustard in it
Add urad dhal, channa dhal and fry until golden brown
Add curry leaves
Add onion and sauté it well until raw smell goes off
Add asafoetida and mix well
Add all vegetables and sauté them well until they are cooked
Add salt and mix well
Add roasted rava and mix well, keep mixing for a minute or two
Add coriander leaves
Now gently pour boiling water into the pan and stir well, usually in this method lumps should not form, but take care as to not to form lumps
Close the pan with a lid and leave it to cook for 2~3min in medium flame
Add ghee, mix well
If you like to roast the bottom of upma continue it for another 4~5min in medium flame
Serve hot with any chutneys and/or pickles and/or thick curd
