Heat ghee in a pan
Add cumin seeds and allow it to splutter
Add garlic, onion and sauté until golden brown
Add ginger and sauté well
Add carrot, beans, potato, black pepper, green chili, red chili powder, garam masala powder, fennel powder, turmeric powder, salt and mix well
Allow it to cook for about 2~3min
Add almond, cashew, grated cheese and mix well
Add besan/roasted gram flour to make the mixture into a dough
Switch off the flame
Chill the dough in fridge for about 30min to firm up
Pre-heat the GOT for 5~6min
Settle the dough on the tandoor rod for roasting
Brush little oil over it
Roast the set sheek kebab inside the tandoor
Once roasted, serve hot with tomato ketchup or mint chutney
