Instructions
Main
Pressure cook zucchini, carrot along with turmeric powder, salt
for masala
Heat oil in a pan
Add urad dhal, fry a little
Add fenugreek, black pepper, red chili, fry until urad dhal turns golden brown
Finally, add coconut, mix well
Grind above masala Ingredients into a fine paste, add a little water as possible
Add the ground masala to cooked zucchini, mix well, bring to a boil
for tempering
Heat oil for tempering
Add mustard, allow it to crackle
Add urad/channa dhal, red chili, fry until golden brown
Add curry leaf, fry a bit
Pour it into zucchini koottu, mix well
Notes
Serve hot along with rice or roti
