Zucchini Koottu
Ingredients
- 1 nos Zucchini - chopped
- 2 tbsp Carrot / காரெட் - chopped
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 tsp Salt / உப்பு - (adjust to your taste)
for masala
- ½ tsp Oil / எண்ணெய்
- 1 tsp Urad Dhal / உளுத்தம் பருப்பு
- ½ cup Coconut, Fresh / தேங்காய் - grated
- 5 nos Red Chili, Dry / வற மிளகாய் - (adjust to your spice level)
- 5 nos Black Pepper / மிளகு
- ½ tsp Fenugreek seed / வெந்தயம்
for tempering
- 1 tbsp Oil / எண்ணெய்
- 1 tsp Mustard seed / கடுகு
- 1 tsp Urad Dhal / உளுத்தம் பருப்பு
- 1 tsp Chana Dhal / கடலைப் பருப்பு
- 1 nos Red Chili, Dry / வற மிளகாய்
- 5 nos Curry leaves, Fresh / கருவேப்பிலை
Instructions
Main
- Pressure cook zucchini, carrot along with turmeric powder, salt
for masala
- Heat oil in a pan
- Add urad dhal, fry a little
- Add fenugreek, black pepper, red chili, fry until urad dhal turns golden brown
- Finally, add coconut, mix well
- Grind above masala Ingredients into a fine paste, add a little water as possible
- Add the ground masala to cooked zucchini, mix well, bring to a boil
for tempering
- Heat oil for tempering
- Add mustard, allow it to crackle
- Add urad/channa dhal, red chili, fry until golden brown
- Add curry leaf, fry a bit
- Pour it into zucchini koottu, mix well
Notes
Serve hot along with rice or roti
