Uppappam aka Kuzhi Paniyaram
Ingredients
- 1 cup Rice / அரிசி - soaked for 6hours
- ⅓ cup Urad Dhal / உளுத்தம் பருப்பு - soaked for 6hours
- 1 nos Onion / வெங்காயம் - finely chopped
- ½ cup Carrot / காரெட் - grated
- 1 bunch Coriander leaves, Fresh / கொத்தமல்லி - finely chopped
- 2 nos Green Chili, Fresh / பச்சை மிளகாய் - finely chopped
- 1 tsp Salt / உப்பு - adjust to your taste
- 400 ml Oil / எண்ணெய் - for frying
Instructions
- Grind urad dhal into fine batter
- Grind rice into little coarse batter
- Mix them well along with salt
- Leave it closed for about 8~10hours for it to ferment
- Add onion, carrot, fresh coriander, green chili and mix well
- Heat kuzhi paniyaram pan fill it with little oil for frying
- Keep the flame in medium
- Pour spoonful of batter into each shallow space (kuzhi)
- Turn the appam upside down with a stick, so that it will cook and fry the other side too evenly
- Once appam turns golden brown on both sides remove from the pan and store hot
- Serve hot with coconut or coriander chutney
