Ingredients
  

  • 2 tbsp Rice, raw / பச்சரிசி
  • 4 - 5 tbsp Sugar, White / சர்க்கரை, வெள்ளை
  • 5 - 10 strands Saffron / குங்குமப் பூ
  • 1 ltr High Fat Milk
  • 1 tsp Ghee / நெய்

Instructions
 

  • Wash the rice well and dry a little with a cloth
  • Heat ghee in a thick bottomed vessel, preferably a cooker
  • Fry the rice gently
  • When rice turn color to bright white pour milk on it and boil well
  • Rice should cook well in the milk
  • When the milk comes to a boil simmer the flame and allow the rice to overcook
  • By now the milk should also be little thickened
  • Add sugar and boil the milk further
  • Once the sugar is has dissolved well, switch off the flame
  • Add a few strands of saffron on top of the payasam
  • Serve hot

Notes

Variations
* If required you could use basmati rice as well
* If required you could grind the rice coarsely
* If required you could garnish with fried cashew nuts and raisins
