Paal Payasam
Ingredients
- 2 tbsp Rice, raw / பச்சரிசி
- 4 - 5 tbsp Sugar, White / சர்க்கரை, வெள்ளை
- 5 - 10 strands Saffron / குங்குமப் பூ
- 1 ltr High Fat Milk
- 1 tsp Ghee / நெய்
Instructions
- Wash the rice well and dry a little with a cloth
- Heat ghee in a thick bottomed vessel, preferably a cooker
- Fry the rice gently
- When rice turn color to bright white pour milk on it and boil well
- Rice should cook well in the milk
- When the milk comes to a boil simmer the flame and allow the rice to overcook
- By now the milk should also be little thickened
- Add sugar and boil the milk further
- Once the sugar is has dissolved well, switch off the flame
- Add a few strands of saffron on top of the payasam
- Serve hot
Notes
Variations
* If required you could use basmati rice as well
* If required you could grind the rice coarsely
* If required you could garnish with fried cashew nuts and raisins
