Malpuva
Ingredients
- 1 cup Maida
- 1 tbsp Wheat Rava
- 1 cup Milk / பால்
- 1 cup Milk powder - or Condensed milk
- 2 tbsp Paneer - minced
- 1 cup Sugar, White / சர்க்கரை, வெள்ளை
- 2 nos Cardamom, Green / ஏலக்காய் - powdered
- 4 strands Saffron / குங்குமப் பூ - powdered
- 5 nos Almond / பாதாம் - chopped
- 5 nos Pistachio / பிஸ்தாப் பருப்பு - chopped
- 500 ml Ghee / நெய் - to fry [do not care about calorie, focus on taste :p]
Instructions
- Mix maida, sooji, milk powder well
- Add milk little by little, mix well until it gets into a batter without any lumps
- Close and rest it for 15~20min
- Mean while heat a pan
- Add sugar, add water until the whole of sugar gets wet
- Mix the sugar well to dissolve
- Boil the sugar syrup until it gets to one string consistency
- Add cardamom powder, saffron mix well, keep it aside
- Add some ghee in a pan
- Heat it in a medium flame
- Pour the batter on to hot pan such that it forms small pancake-like shape, do not spread it, allow it will automatically spread
- When the sides turn golden brown, its time to reverse the side
- Fry it well until it turns golden brown too
- Dip into the sugar syrup for about 30sec
- Reverse side and dip for another 30sec
- Strain the sugar syrup from malpuva, keep aside
- Fry all malpuva like above
- Garnish with almond, pistachio
Notes
Serve along with rabdi or mawa topping
Note: To prepare the traditional way use kowa/mawa instead of milk powder or condensed milk.
