Mint Pulav with Coconut Milk
Ingredients
- 2 cup Rice / அரிசி
- 1 cup Mint leaves, Fresh / புதீனா இலை - chopped
- 2 cup Mixed Vegetables - chopped
- 2 cup Coconut Milk / தேங்காய்ப் பால்
- 3 nos Green Chili, Fresh / பச்சை மிளகாய் - minced (adjust to your spice level)
- 1 tsp Shahi Jeera
- 1 nos Bay leaf, Dry
- 2 nos Cardamom, Green / ஏலக்காய்
- 3 nos Cloves / லவங்கம்
- 1 nos Star Anise
- 1" piece Cinnamon stick / லவங்கப் பட்டை
- 1 tsp Black Pepper / மிளகு
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Heat ghee in a pan
- Add shahi jeera, bay leaf and fry a little
- Add cardamom, clove, star anise, cinnamon, black pepper and fry a little
- Add salt and mix well
- Add rice and mix well
- Add 1 cup of coconut milk and mix well
- Transfer into an electric / pressure cooker
- Add rest of coconut milk, adequate water and cook until soft
