Eggplant Patties
Ingredients
- 1 nos Eggplant, Big / கத்தரிக்காய் பெரியது - peeled and diced
- 1 cup Wheat Rava
- 5 nos Shallots - thinly sliced
- 3 nos Garlic / பூண்டு - minced
- ½ cup Cheese - grated
- 2 tbsp Olive oil / ஆலிவ் எண்ணெய்
- ½ tsp Sea salt - adjust to your taste
- ¼ tsp Black Pepper / மிளகு - freshly ground
- 2 tbsp Coriander leaves, Fresh / கொத்தமல்லி - chopped
Instructions
- Heat 1tbsp of olive oil in a large skillet ove medium heat
- Add onion and salt and sauté until translucent
- Add garlic and sauté until fragrant
- Add eggplant and sauté well, stir every now and then, until browned and soft for about 10min
- Transfer into a blender and blend into a puree
- Add cheese, coriander , black pepper and mix well
- Add rava little by little and mix until it reaches a firm consistency and will hold up as patties
- Refrigerate it for about 20min, thus the rava will such up some of the moisture
- Divide into 8 balls and make into patties
- Heat remaining olive oil in the same skillet over medium heat
- When sizzling, add patties in batches and cook for 4~5min on each side until golden brown
- Serve hot with ketchup/sauce on the side
