Ingredients
  

  • 1 nos Eggplant, Big / கத்தரிக்காய் பெரியது - peeled and diced
  • 1 cup Wheat Rava
  • 5 nos Shallots - thinly sliced
  • 3 nos Garlic / பூண்டு - minced
  • ½ cup Cheese - grated
  • 2 tbsp Olive oil / ஆலிவ் எண்ணெய்
  • ½ tsp Sea salt - adjust to your taste
  • ¼ tsp Black Pepper / மிளகு - freshly ground
  • 2 tbsp Coriander leaves, Fresh / கொத்தமல்லி - chopped

Instructions
 

  • Heat 1tbsp of olive oil in a large skillet ove medium heat
  • Add onion and salt and sauté until translucent
  • Add garlic and sauté until fragrant
  • Add eggplant and sauté well, stir every now and then, until browned and soft for about 10min
  • Transfer into a blender and blend into a puree
  • Add cheese, coriander , black pepper and mix well
  • Add rava little by little and mix until it reaches a firm consistency and will hold up as patties
  • Refrigerate it for about 20min, thus the rava will such up some of the moisture
  • Divide into 8 balls and make into patties
  • Heat remaining olive oil in the same skillet over medium heat
  • When sizzling, add patties in batches and cook for 4~5min on each side until golden brown
  • Serve hot with ketchup/sauce on the side
