Ingredients
  

  • 500 gm Eggplant / கத்தரிக்காய் - cut each into 4pieces
  • 1 lemon size Tamarind extract / புளிக் கரைசல்
  • 1 tsp Turmeric powder / மஞ்சள் தூள்
  • 2 tbsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
  • 250 gm Sesame Oil / நல்லெண்ணெய்
  • 1 tsp Salt / உப்பு - adjust to your taste

Instructions
 

  • Heat 2tbsp of oil in a pan
  • Sauté eggplant well until it is well cooked, allow it to cool
  • Grind the eggplant into fine paste
  • Add eggplant paste and tamarind extract to the pan
  • Add little more oil, turmeric powder, red chilli powder, salt
  • Stir the mix continuously, else the bubbles formed will burst and splash the paste all over the place
  • Add oil little by little and keep stirring
  • Once the paste is thick add remaining oil and allow it to cook for 3~5min
  • Allow it to cool

Note
* Store in a air tight dry container
* Store in a cool dry place
* Never use damp spoon or spatula
