Kathirikkai Thokku

Ingredients
- 500 gm Eggplant / கத்தரிக்காய் - cut each into 4pieces
- 1 lemon size Tamarind extract / புளிக் கரைசல்
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 2 tbsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- 250 gm Sesame Oil / நல்லெண்ணெய்
- 1 tsp Salt / உப்பு - adjust to your taste
Instructions
- Heat 2tbsp of oil in a pan
- Sauté eggplant well until it is well cooked, allow it to cool
- Grind the eggplant into fine paste
- Add eggplant paste and tamarind extract to the pan
- Add little more oil, turmeric powder, red chilli powder, salt
- Stir the mix continuously, else the bubbles formed will burst and splash the paste all over the place
- Add oil little by little and keep stirring
- Once the paste is thick add remaining oil and allow it to cook for 3~5min
- Allow it to cool
