Vendaikkai Vadakkal
Ingredients
- 500 gm Okra / வெண்டைக் காய் - finely chopped
- 1 tsp Mustard seed / கடுகு
- 1 tsp Chana Dhal / கடலைப் பருப்பு
- 1 tsp Urad Dhal / உளுத்தம் பருப்பு
- 2 tsp Red Chili powder / மிளகாய்த் தூள் - adjust to your spice level
- 1 tsp Salt / உப்பு - adjust to your taste
- 50 ml Oil / எண்ணெய்
- 1 tsp Turmeric powder / மஞ்சள் தூள்
- 1 pinch Asafoetida / பெருங்காயம்
Instructions
- Heat a pan and add 1tsp of oil
- Temper mustard, once it starts spluttering add chana dhal and fry until golden brown
- Add turmeric powder, asafoetida, red chili powder and sauté well
- Add cut okra and oil alternately little by little and mix well
- Allow it to cook for 10~15min [do not close the pan]
- Occasionally mix the okra such that every piece gets its chance to be at bottom of the pan
- Fry them in low flame until half of okra turns crispy
- Serve hot with rice and sambar
